- 800 g whole snapper, gutted and scaled
- 1 lemon, thinly sliced
- 6 sprigs thyme
- .5 brown onion, thinly sliced
- 4 cloves garlic, thinly sliced
- 4 vine ripened tomatoes, sliced
- 6 new potatoes, thinly sliced
- 2 tbsp extra virgin olive oil
- 250 g broccolini
