- 200 g tin tuna in olive oil
- 1 red capsicum (bell pepper), diced
- 1 Lebanese cucumber, diced
- 400 g tin chickpeas, drained
- 1 cup corn, frozen
- .5 iceberg lettuce, shredded
- .25 cup parsley, roughly chopped
- .5 red onion, finely chopped
- 2 tbsp cottage cheese
- 2 tsp red wine vinegar
- 1 tsp dijon mustard
