Thai Style Stir-Fry Noodles
Serves 6
- 200 g flat rice noodles
- 3 zucchini, cut into sticks
- 2 carrots, sliced into ribbons
- 2 bunches broccolini, cut into bite sized pieces
- 1 red chilli, thinly sliced
- 2 tbsp extra virgin olive oil
- 500 g chicken mince
- 3 eggs
- .3 cup salt-reduced soy sauce
- .25 cup oyster sauce
- 1 lime, juiced
- 50 g crushed peanuts to serve
