- 600 g chicken thigh fillet
- 600 g fine cut coleslaw mix
- 1 bunch of mint (or coriander/cilantro)
- 2 avocados
- 1 red chilli
- 2 limes
- 0.3 cup extra virgin olive oil
- 3 tbsp soy sauce
- 3 tbsp sweet chilli sauce
- 1 tsp grated ginger or garlic (optional)
- 0.3 cup granulated nuts
