Sticky Chicken Salad
Serves 2
- 2 tbsp kecap manis (sweet soy sauce)
- 2 tsp fish sauce
- 1 tsp extra virgin olive oil
- 250 g chicken stir fry strips (or cut chicken thighs into strips)
- 0.25 cup panko bread crumbs
- 1 cucumber, roughly chopped
- 100 g cherry tomatoes, chopped
- 1 cup shredded carrot
- 0.5 red onion, finely sliced
- 2 tbsp granulated nuts (peanuts or cashews work well here)
- 1 cup fresh coriander, chopped
- 2 tbsp sweet chilli sauce
- 1 lime, juiced
