- 600 g chicken thigh fillet
- 200 g rice vermicelli noodles
- 1 cup mint
- 2 Lebanese cucumbers
- 600 g fine cut coleslaw mix
- 1 cup cashews
- .25 cup sweet chilli sauce
- .3 cup extra virgin olive oil
- .25 cup soy sauce (or gluten-free soy sauce)
- 3 tbsp lemon juice
- 1 tsp ginger, grated finely (optional)
