Spring Wholegrain Salad
Serves 6
- 500 g Brown Rice and Quinoa, Cooked (Microwavable)
- 1 bunch of asparagus
- 0.5 cup cup peas, frozen
- 0.5 bunch of radishes, thinly sliced
- 0.5 cup mint leaves, roughly chopped
- 0.5 cup parsley leaves, roughly chopped
- 0.25 cup flaked almonds, toasted
- 0.25 cup pepitas (pumpkin seeds), toasted
- 1 avocado, cubed
- 0.3 cup dried currants
- 0.3 cup apple cider vinegar
- 0.3 cup extra virgin olive oil
- 2 tbsp honey
