- 200 g baby spinach
- 5 eggs
- 325 g ricotta
- 1 tbsp lemon (zest)
- 2 green onions, thinly sliced
- 4 sheets filo pastry
- 400 g heirloom tomatoes
- .25 cup basil, shredded
- 2 tbsp white wine vinegar
- 1 tbsp garlic
- 2 tbsp extra virgin olive oil
