- 1 tbsp extra virgin olive oil
- 1 brown onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, thinly sliced
- 3 cup vegetable stock
- 1.25 cup light coconut milk
- 1 cup red lentils, raw
- 1 tbsp curry powder
- .5 cup coriander (cilantro), roughly chopped
- 2 cup baby spinach, roughly chopped
- .25 cup Greek yoghurt
