- 2 medium sweet potatoes, cut into wedges
- 3 tbsp extra virgin olive oil
- 1 tbsp rosemary, finely chopped
- 2 cup mixed leaf salad bag
- 1 Lebanese cucumber, thinly sliced
- 1 avocado, thinly sliced
- 4 radishes, quartered
- .25 cup black olives, sliced
- .5 cup pomegranate seeds
- 1 tbsp lemon juice
