Satay Soba Noodle Salad with Tofu

- 90 g soba noodles
- 2 tbsp smooth peanut butter
- 2 tbsp sweet chilli sauce
- 1 lime, juiced
- 2 tbsp water
- 200 g peanut satay marinated tofu, cut into 1cm strips
- 30 g coleslaw, finely cut
- 0.2 cup fresh mint leaves, roughly chopped
- 0.25 cup fresh coriander leaves, roughly chopped
- 1 tbsp granulated nuts
- 1 tbsp fresh chilli, finely chopped (optional)
