- 200 g frozen shelled edamame
- 200 g soba noodles
- 1 large carrot, peeled, shredded
- 2 green shallots, thinly sliced
- 4 baby cucumbers, quartered length ways
- 50 g baby spinach
- 0.25 cup chopped salted peanuts
- 0.5 cup smooth peanut butter
- 2 tbsp hoisin sauce
- 1 tbsp lime juice
