- 1 Eggplant, chopped into 2-3cm pieces
- 2 Red onion
- 1 cup parsley
- 1 cup mint
- 2 tbsp roast vegetable spice
- 1 cup quinoa, raw
- 3 tbsp extra virgin olive oil
- .25 cup hazelnuts, dry roasted
- .25 cup sunflower seeds, dry roasted
- 1 pomegranate, seeds removed
