- 1 cup pearl couscous
- 0.25 cup pesto
- 200 g cherry tomatoes, halved
- 1 Lebanese cucumber, diced
- 0.25 cup pumpkin seeds (pepitas), toasted
- 1 cup kalamata olives, pitted
- 1 tbsp dill, roughly chopped
- 0.25 cup basil leaves, roughly chopped
- 100 g bocconcini
- 4 eggs
