Pearl Couscous Salad with Honey Mustard Dressing

- 1 cup pearl couscous
- 200 g cherry tomatoes, finely chopped
- 1 cucumber, finely chopped
- 0.25 red onion, finely chopped
- 0.25 cup pitted kalamata olives, roughly chopped
- 0.25 cup fresh parsley leaves, finely chopped
- 0.25 cup fresh basil leaves, finely chopped
- 1 lemon, 30ml of juice and zested
- 1 tsp dijon mustard
- 0.25 cup extra virgin olive oil
- 1.5 tbsp honey
- 0.25 cup flaked almonds, toasted
