Pearl Couscous Salad with Homemade Pita Crisps

- 300 g pearl couscous
- 6 large tomatoes, diced
- 2 Lebanese cucumbers, diced
- .5 bunch parsley (about ½ cup chopped, loosely packed)
- 6 free-range eggs
- .5 packet Lebanese bread
- 1 tsp chilli flakes (or paprika or za’atar).
- 3 tbsp lemon juice
- 2 tbsp honey
- 3 tbsp extra virgin olive oil
- .25 tsp salt
- 220 g hummus
