One Tray Portuguese Chicken

- 800 g chicken thigh fillets
- 400 g tin chickpea, drained
- 1 red capsicum (red pepper), sliced
- 400 g tin corn kernels, drained
- 600 g sweet potato, chopped into small pieces
- 2 tbsp Portuguese spice mix
- 2 tbsp extra virgin olive oil (garlic infused)
- 0.5 lemon
