One Tray Portuguese Chicken with Brown Rice

- 2 tbsp extra virgin olive oil
- 1 brown onion, diced
- 1 red capsicum (pepper), diced
- 400 g corn kernels, tinned, drained
- 2 tbsp Portuguese chicken seasoning
- 1.5 cup brown rice (raw)
- 500 ml chicken stock
- 0.5 cup water
- 600 g chicken thigh cutlets (bone-in)
