One Tray Honey Soy Chicken
Serves 4
- 400 g chicken thigh fillets, cut in half
- 200 g mushrooms (e.g. button, cup, brown), sliced
- 2 bunches of broccolini
- 500 g microwavable brown rice
- 2 tsp sesame seeds, to serve (optional)
- 2 tbsp honey
- 3 tbsp soy sauce (or tamari for GF)
- 2 tbsp lemon, juiced
- 2 cloves garlic, crushed
