One Tray Crispy Tofu & Veg Bowl
Serves 2
- 1 medium sweet potato, cut into small cubes
- 1 zucchini, cut into bite sized pieces
- 1 capsicum, cut into strips
- 1 red onion, cut into wedges
- 200 g firm marinated tofu, cut into small cubes
- 2 tbsp extra virgin olive oil
- 2 tsp smoked paprika
- 1 tsp cumin
- 0.25 cup fresh parlsey, finely chopped
- 4 tbsp Tahini Flavour Bomb (see seperate recipe)
