One Tray Butter Chicken

450 g butter chicken simmer sauce (mild)
2 tbsp butter chicken paste (mild)
2 large carrots, finely chopped
0.5 cauliflower, cut into small bite size florets
400 g tin diced tomato
400 g tin chickpeas, drained
500 g chicken thigh fillets (4 fillets)
0.25 cup Greek yoghurt, to serve
1 Handful of mint leaves to serve
