One Pot Mediterranean Pasta

- 1.5 tbsp extra virgin olive oil
- 1 brown onion, finely chopped
- 4 anchovy fillets
- 1 tbsp capers
- 1 capsicum (bell pepper), cut into bite sized pieces
- 1 zucchini, cut in half lengthwise and then into 1cm half moons
- 200 g mushrooms, sliced
- 0.25 cup kalamata olives, sliced
- 2 garlic cloves, crushed
- 1 tsp Italian herbs
- 400 g diced tomato
- 2 cup vegetable stock
- 1 tsp honey
- 200 g penne pasta
- 0.25 cup fresh basil leaves
- 0.25 cup parmesan cheese, grated or shaved
- 1 tsp chilli flakes (optional)
