One Pot Eggplant Parma Pasta

- 0.25 cup sunflower seeds
- 0.25 cup pepitas (pumpkin seeds)
- 2 tbsp sesame seeds
- 1 tbsp extra virgin olive oil
- 1 large eggplant, diced
- 1 red onion, thinly sliced
- 2 cloves garlic, crushed
- 700 g passata
- 1 tbsp Italian seasoning
- 400 g wholemeal penne pasta
- 1 cup mozzarella, grated
