One Pot Cheesy Veg Pasta
Serves 4
- 2 tbsp extra virgin olive oil
- 1 brown onion, finely chopped
- 4 garlic cloves, crushed
- 250 g mushrooms, roughly chopped
- 1 cup frozen peas
- 1 head of broccoli, chopped into bite sized pieces.
- 2 cup pasta
- 3 cup salt reduced veg stock
- 1 cup shredded cheese
- 1 cup fresh parsley leaves, roughly chopped and loosely packed
- 1 lemon, cut into wedges
- 0.25 cup grated parmesan cheese (optional)
