Mexican Fried Rice
Serves 4
- 2 tbsp extra virgin olive oil
- 1 large red onion, finely chopped
- 1 cloves garlic, crushed
- 2 tbsp tomato paste
- 400 g tin black beans, drained
- 400 g tin corn kernels drained
- 450 g heat and serve (microwavable) cooked brown rice
- 2 tsp Mexican seasoning
- 250 g tomato, diced
- 1 cup fresh coriander leave, finely chopped
- 1 lime, juiced
