- 2 avocados, cut into cubes
- 1 capsicum, thinly sliced
- 1 red onion, roughly chopped
- 400 chicken tenderloins, cut into bite sized pieces
- 400 tin corn kernels
- 1 tbsp extra virgin olive oil
- 2 tbsp Mexican/taco spice
- 1 lime, juiced
- 250 g cherry tomatoes, chopped
- 0.5 bunch coriander, leaves chopped
- 100 g corn chips
