Serves 4
- 1.5 cup dry orzo/risoni pasta
- 3 cup chicken or vegetable broth
- 1 tbsp extra virgin olive oil
- 500 g raw prawns, peeled and deveined
- 0.5 tsp smoked paprika
- 0.5 red onion, finely diced
- 3 garlic cloves, minced
- 2 bunch asparagus, cut into quarters
- 2 cup frozen peas
- 2 cup baby spinach
- 1 lemon, zest and juice
- 0.5 cup milk
- 0.25 cup slivered almonds, toasted
- 4 tbsp parmesan cheese, grated
- 0.25 cup fresh parsley (optional)
- 1 tsp chilli flakes (optional)
