- .25 cup parsley, finely chopped
- .25 cup mint, finely chopped
- 400 g tin white beans
- 1 Lebanese cucumber, diced
- 250 g cherry tomatoes, halved
- 1 lemon, juice and rind
- 2 tbsp extra virgin olive oil
- .25 cup walnuts, roughly chopped
