200 g Pad thai rice noodles
1 tbsp extra virgin olive oil garlic infused*
1 scallion (green onion), chopped, separate white and green bits
300 g firm tofu, cubed
2 eggs, whisked
2 red capsicum (pepper), thinly sliced
2 limes, 1 juiced, 1 sliced to serve
2 tbsp fish sauce
2 tbsp hoisin sauce
150 g bean sprouts
0.5 cup crushed peanuts (Optional)
