Healthy Pad Thai
Serves 4
- 200 g Pad thai rice noodles
- 1 tbsp extra virgin olive oil garlic infused*
- 1 scallion (green onion), chopped, separate white and green bits
- 300 g firm tofu, cubed
- 2 eggs, whisked
- 2 red capsicum (pepper), thinly sliced
- 2 limes, 1 juiced, 1 sliced to serve
- 2 tbsp fish sauce
- 2 tbsp hoisin sauce
- 150 g bean sprouts
- 0.5 cup crushed peanuts (Optional)
