- 1.5 cup pearl couscous
- 2 large flat mushrooms
- 2 bunches asparagus, ends trimmed
- 100 g halloumi, sliced
- 0.25 cup toasted almonds, crushed
- 1 tbsp garlic infused olive oil
- 0.5 cup fresh parsley, roughly chopped
- 0.25 cup raisins
- 60 g fresh baby spinach leaves
- 1 lemon, juiced
- 2 tbsp extra virgin olive oil
- 1 tbsp honey
