Go-To Meal Prep Salad
Serves 4
- 1 tbsp extra virgin olive oil
- 2 zucchini, cut in lengthways and thinly sliced
- 0.333 cup tahini
- 1 tsp dijon mustard
- 1.5 tbsp maple syrup
- 100 ml lemon juice
- 0.333 cup water
- 0.5 tsp salt
- 0.5 tsp cracked pepper
- 0.5 cup dry roasted almonds
- 1 bunch curly kale, leaves removed and finely chopped
- 1 bunch parsley, leaves and tender stems finely chopped
- 1 bunch dill, finely chopped
- 250 g heat and serve black rice
- 0.5 cup pickled red onion
- 425 g tin tuna
