Freezer-friendly Burritos
Serves 6
- 500 g beef mince
- 1 tbsp extra virgin olive oil
- 1 onion, finely chopped
- 1 capsicum, roughly chopped
- 2 cloves garlic, crushed
- 400 g black beans
- 400 g tin diced tomato
- 200 g tin lentils
- 200 g tin corn kernels
- 1 tbsp taco seasoning (mexican seasoning)
- 6 wholegrain tortillas
- 200 g brown rice and quinoa, heat and serve (cooked) rice
- 60 g baby spinach
- 75 g mozzarella cheese, shredded
