- 1 capsicum, thinly sliced
- 1 red onions, cut into wedges
- 2 tsp cumin
- 1 lime
- 2 tsp paprika
- 1 tbsp extra virgin olive oil
- 1 cup corn, frozen
- 1 tomato, diced
- 250 g brown rice, cooked
- 1 avocado, mashed
