Crispy Gnocchi Tray Bake
Serves 4
500 g dried (uncooked) gnocchi
2 zucchini, cut into bite size pieces
1 capsicum, thinly sliced
1 large onion, cut into wedges
400 g tin cherry tomatoes, partly drained
500 g chicken thigh - cut into strips
200 g feta
1 tsp Italian herbs
0.25 cup fresh parsley leaves, roughly chopped
3 tbsp Tahini Flavour Bomb dressing (see seperate recipe)
