Crispy Gnocchi Tray Bake
Serves 4
- 500 g dried (uncooked) gnocchi
- 2 zucchini, cut into bite size pieces
- 1 capsicum, thinly sliced
- 1 large onion, cut into wedges
- 400 g tin cherry tomatoes, partly drained
- 500 g chicken thigh - cut into strips
- 200 g feta
- 1 tsp Italian herbs
- 0.25 cup fresh parsley leaves, roughly chopped
- 3 tbsp Tahini Flavour Bomb dressing (see seperate recipe)
