- 1 tbsp extra virgin olive oil
- 1 carrot, diced
- 1 brown onion, diced
- 3 cloves garlic, crushed
- 400 g porcini mushrooms, sliced
- 100 g dried mushrooms, diced
- 2 sprigs thyme
- 2 tbsp tomato paste
- 2 tbsp plain flour
- 2 cup vegetarian stock
- 1 tbsp balsamic vinegar
- 1 cup peas, frozen
- 4 large sweet potatoes, peeled and diced
- .5 cup milk
