Crumbed Chicken Salad
Serves 4
- .5 cup corn chips, crushed
- .25 cup quinoa flakes
- 2 chicken breast, sliced in half
- 2 eggs, lightly whisked
- 2 tbsp extra virgin olive oil
- 2 cup mixed leaves
- .5 red onion, thinly sliced
- 1 g cucumber, cut in half lengthways and then into 1cm slices.
- 100 g cherry tomatoes, halved
- 1 avocado, thinly sliced
- 1 tbsp lemon juice
- 4 tbsp garlic aioli
