Chinese Lemon Chicken

- 1 lemon, grate rind and juice
- 1 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp cornflour
- 1 tbsp extra virgin olive oil
- 300 g chicken breast, diced
- 200 g green beans, ends removed, halved
- 2 carrots, thinly sliced
- 2 spring onions, thinly sliced
- 250 g brown rice, cooked
