- 1 tbsp extra virgin olive oil
- 400 g chicken stir-fry strips
- 185 g laksa paste
- 250 g mushrooms, sliced
- 250 g snow peas, trimmed
- 1.5 l chicken or vegetable stock
- 400 ml lite coconut milk
- 2 tbsp lime, fresh, juiced
- 150 g rice vermicelli noodles
