- 1 tbsp extra virgin olive oil
- 300 g chicken stir fry strips
- 1 brown onion, finely chopped
- 1 zucchini, cut into 2-inch sticks
- 250 g mushrooms, thinly sliced
- 1 bunch bok choy, washed and bulb removed
- 0.5 cup cashews, unsalted
- 1 tbsp honey
- 1.5 tbsp soy sauce, salt reduced
- 250 g cooked brown rice packet
