Broccoli Mac and Cheese
Serves 6
- 500 g dry pasta
- 3 tbsp extra virgin olive oil
- 1 large head of broccoli, chopped into small floretes
- 2 400g tinned cannellini beans, drained
- 2.5 cup light milk
- 1.5 tbsp flour
- 2.5 tsp vegetable stock powder
- 1 cup cottage cheese
- 2 cup shredded cheddar cheese
- 0.25 tsp pepper
