- 1 tbsp olive oil
- 1 large brown onion, diced
- 400 g tin black beans, rinsed
- 1 cup corn, frozen
- 2 tbsp Mexican spice mix
- 2 wholegrain wraps
- 1 Lebanese cucumber, diced
- 1 baby cos lettuce, shredded
- 200 g cherry tomatoes, halved
- 1 avocado, smashed
- .5 cup Greek yoghurt
