- 1.5 kg side of salmon, skin on
- 1 avocado, diced
- 1 cup fresh continental parsley
- .5 cup coriander (cilantro) + ½ cup for garnish
- 1.5 tbsp dried oregano
- 4 garlic cloves
- .25 cup red wine vinegar
- 3 tbsp lemon, juiced
- 1 red onion
- .6 cup extra virgin olive oil
- 2 red chillies, medium heat
