- 200 g corn (fresh or frozen, charred for flavour)
- 0.5 cup Greek yogurt
- 1 tsp smoked paprika
- 1 tsp dijon mustard
- 1 tsp garlic powder
- 0.5 lemon or lime
- 1 tsp extra virgin olive oil
- 250 g cooked chicken (roast chicken works great here)
- 1 avocado, cubed
- 0.25 cup pickled red onion
- 1 bunch fresh herbs (coriander, dill or parsley if preferred), finely chopped)
- 1 cucumber, finely chopped
- 2 baby co lettuce, chopped
- 0.25 cup feta cheese, crumbled
- 0.5 cup crispy roasted chickpeas
