Juicy Pork Kofta Wraps with Tzatziki

- 500 g pork mince
- 1 large onion, finely grated
- 3 garlic cloves, minced
- 400 g tinned chickpeas, drained, rinsed and mushed
- 1 tsp cumin
- 1 tsp ground coriander (cilantro)
- 0.5 tsp paprika
- 0.5 tsp cinnamon
- 1 tsp salt
- 4 Lebanese wraps
- 100 g baby spinach
- 1 cup Greek yoghurt
- 1 tsp sumac
- 1 bunch mint leaves, finely chopped
- 200 g tomato, finely chopped
- 2 cucumber, finely chopped
- 1 red onion, finely diced
- 1 bunch parsley (leaves and tender stems only), finely chopped
- 0.5 cup pickles, chopped (optional)
- 4 tsp chilli oil (optional)
