Middle Eastern Chicken & Rice Bowl
Serves 2
- 2 chicken thigh fillets
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp sumac
- 0.5 tsp thyme/oregano
- 0.5 tsp chilli (optional)
- 1 lemon, juiced
- 2 tsp Greek yoghurt
- 0.25 red onion, thinly sliced
- 1 cucumber, chopped
- 150 g cherry tomato, sliced
- 0.5 cup fresh parsley leaves, chopped
- 250 g cooked brown rice
- 0.25 cup Tahini Flavour Bomb dressing (see seperate recipe)
- 2 tbsp flaked almonds (toasted)
