- 100 g tomato, diced
- 1 cucumber, diced
- 0.25 red onion, finely sliced
- 30 g pitted kalamata olives
- 250 g heat and serve black rice
- 0.25 cup hummus
- 50 g feta cheese
- 0.25 cup fresh parsley leaves, finely chopped
