- 1 beetroot, cut into bite size pieces
- 1 small sweet potato, cut into bite size pieces
- 1 red onion, cut into wedges
- 2 tbsp honey
- 0.5 tsp chilli flakes
- 1 tsp dijon mustard
- 1 garlic clove, crushed
- 2 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 2 cup baby spinach, roughly chopped
- 0.333 cup pepitas
