- 1 tbsp extra virgin olive oil
- 2 shallots
- 200 g cherry tomatoes, halved
- 4 garlic cloves, crushed
- 150 g sun-dried tomatoes
- 4 chicken thigh fillets, diced
- 2 tsp dried oregano
- 0.5 tsp chilli flakes
- 250 ml lite coconut milk
- 125 ml vegetable stock
- 800 g tinned butter beans, drained and smashed
- 1 tsp corn starch
- 4 cup spinach
- 0.25 cup shredded parmesan cheese
