- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 0.5 tsp dijon mustard
- 1 tsp honey
- 400 g tin chickpeas, drained
- 1 cucumber, chopped
- 0.5 cup olives, sliced
- 0.33 cup sun-dried tomato strips
- 0.5 red onion, thinly sliced
- 50 g feta cheese, roughly chopped
