- 250 g halloumi, chopped into bite sized pieces
- 1 cup walnuts, chopped
- 2 tbsp maple syrup
- 0.5 cup pomegranate seeds
- 0.5 cup spring onion, thinly sliced
- 2 cucumber, roughly chopped
- 0.5 cup extra virgin olive oil
- 2 lemons, juiced
- 0.5 tsp salt
- 0.5 tsp pepper
